Ingredients:

For the Cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup milk
  • 2 cups diced fresh or canned peaches (drained if canned)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

For the Brown Sugar Topping:

  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 2 tbsp melted butter

Optional Glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat and Prep:
    • Preheat oven to 325°F (163°C).
    • Grease and flour a bundt pan (or a loaf pan).
  2. Make the Brown Sugar Topping:
    • In a small bowl, mix brown sugar, cinnamon, and melted butter.
    • Spoon into the bottom of the pan (this will caramelize when baked!).
  3. Prepare the Cake Batter:
    • Cream butter and sugar together until light and fluffy (about 3–5 minutes).
    • Beat in eggs, one at a time, then add vanilla.
    • In a separate bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
    • Add dry ingredients to wet ingredients in three parts, alternating with sour cream and milk.
    • Fold in diced peaches gently.
  4. Bake:
    • Pour the batter evenly into the pan.
    • Bake for 60–70 minutes, until a toothpick comes out clean.
    • Let cool in the pan for 15 minutes, then turn out onto a wire rack.
  5. Glaze (Optional):
    • Whisk powdered sugar, milk, and vanilla.
    • Drizzle over the cooled cake for extra sweetness!
