Corn Ribs

Corn ribs are a trendy and delightful twist on traditional corn on the cob, transforming corn into crispy, flavorful “ribs” that are perfect for snacking or as a unique side dish. This recipe combines savory, spicy, and sweet flavors for a truly memorable dish.


  • 4 ears of corn, husked
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp chili powder (adjust to taste)
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • Salt and pepper, to taste
  • Fresh chopped cilantro or parsley, for garnish
  • Lime wedges, for serving


  1. Prep the Corn:
    • Stand each ear of corn upright on its stem end. Using a sharp knife, carefully slice the corn into quarters lengthwise to create the “ribs.”
  2. Blanch the Corn:
    • Bring a large pot of water to a boil. Carefully add the sliced corn pieces and let them blanch for 3-5 minutes. This process softens the corn and makes it easier to eat once grilled or baked.
    • Using tongs, remove the corn pieces and place them on a paper towel to dry.
  3. Season the Corn:
    • In a large bowl, combine olive oil, smoked paprika, garlic powder, chili powder, onion powder, cayenne pepper (if using), salt, and pepper.
    • Add the blanched corn ribs to the bowl and toss them until they’re well-coated with the seasoning mixture.
  4. Cooking Options:Grilling:
    • Preheat your grill to medium-high heat.
    • Place the seasoned corn ribs on the grill and cook for about 10-15 minutes, turning occasionally, until they are charred and crispy.
    Oven Baking:
    • Preheat your oven to 425°F (220°C).
    • Lay the seasoned corn ribs on a baking sheet lined with parchment paper or a silicone mat.
    • Bake for 20-25 minutes, turning them halfway through, until they are golden brown and have a crispy texture.
  5. Serve:
    • Once cooked, transfer the corn ribs to a serving platter.
    • Garnish with fresh chopped cilantro or parsley and a squeeze of lime.
    • Serve immediately with additional lime wedges on the side.
