Strawberry Shortcake Stuffed French Toast

French Toast is already one of the best breakfast choices out there. Make it even better by stuffing it with delicious strawberry shortcake. Strawberry Shortcake Stuffed French Toast is perfect for Sunday morning brunch, breakfast for dinner, or any special occasion

Ingredients:

  1. 8 slices of thick-cut brioche or challah bread
  2. 2 large eggs
  3. 1/2 cup whole milk
  4. 1 tsp vanilla extract
  5. 1/4 tsp ground cinnamon
  6. 1 cup fresh strawberries, diced
  7. 4 oz cream cheese, softened
  8. 2 tbsp granulated sugar
  9. 1 tbsp powdered sugar, for dusting
  10. Butter, for frying
  11. Optional toppings: whipped cream, maple syrup, extra sliced strawberries

Instructions:

  1. Prepare the Filling: In a mixing bowl, combine the softened cream cheese, granulated sugar, and half of the diced strawberries. Mix until well combined.
  2. Prepare the French Toast Batter: In another bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth.
  3. Assemble: Take one slice of bread and spread a generous amount of the strawberry cream cheese mixture on one side. Place another slice of bread on top, sandwiching the filling in between. Repeat for the remaining slices.
  4. Fry: Heat a large skillet or griddle over medium heat and add a knob of butter, allowing it to melt. Once hot, dip each bread sandwich into the egg mixture, ensuring both sides are well-coated, then place it in the skillet. Cook until golden brown, about 3-4 minutes per side.
  5. Serve: Transfer the cooked French toast to plates. Dust with powdered sugar, and if desired, top with whipped cream, extra strawberries, and a drizzle of maple syrup. Serve immediately and enjoy!

Tips:

  • For an added touch, you can mix in some lemon zest or a splash of almond extract to the cream cheese mixture for extra flavor.
  • Ensure that the pan isn’t too hot to avoid burning the bread before the inside is heated and the cream cheese is slightly melted.
