Banana Pudding Cheesecake

Ingredients:

For the crust:

  • 1 ½ cups of graham cracker crumbs
  • ½ cup of melted butter
  • 2 tablespoons of granulated sugar

For the filling:

  • 24 ounces of cream cheese, softened
  • 1 cup of granulated sugar
  • 3 ripe bananas, mashed
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • ½ cup of all-purpose flour

For the topping:

  • 1 ½ cups of heavy cream
  • ¼ cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • Sliced bananas for garnish
  • Crushed vanilla wafers for garnish

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.
  2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar for the crust. Press the mixture into the bottom of the prepared springform pan to form an even layer. Set aside.
  3. In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the mashed bananas, eggs, and vanilla extract. Beat until well combined.
  4. Gradually add the flour to the cream cheese mixture, mixing until just incorporated. Be careful not to overmix.
