Samoa Brownies (Yes the Girl Scout Cookie)
Ingredients
For the brownies:
- 4 eggs (could try using flax eggs for vegan)
- 1/4 cup cacao powder
- 8oz chocolate of choice
- 3/4 cup coconut oil
- 1/4-12 cup protein powder
- 1/4 cup coconut sugar
- 1/4 cup maple syrup, stevia, monk fruit or more coconut sugar
- 1 tsp vanilla
- 1/3 tsp sea salt
For the Samoa topping:
- 2 cups toasted coconut flakes
- 1/4 cup maple syrup or sweetener of choice (I used Lakanto maple syrup to keep it lower carb/sugar)
- 1 tsp vanilla
- 2 tbsp roasted cashew butter (or any nut butter)
- pinch of sea salt
Instructions
Brownies
Melt the chocolate & coconut oil together until smooth.
In a separate bowl, combine eggs and sugars and beat until light and fluffy. Slowly fold the egg mixture into the chocolate mixture.
Add the cacao powder & protein powder. Don’t over mix.
Pour into a baking pan & bake at 325F for 18-22 minutes. You’ll want to remove them when they are still slightly underdone.
Samoa Topping
Whisk all ingredients besides coconut until smooth, then slowly fold in coconut flakes.
Press on top of cooled brownies.
Chocolate topping:
chocolate bar of choice
2 tsp coconut oil
Melt chocolate & coconut oil until smooth. Drizzle over brownies.
You can set them in the fridge to cool.
