INGREDIENTS

• 8oz tub (not block) plain cream cheese spread 
• 10oz salted caramel sauce, store-bought or homemade
• Optional: chopped roasted nuts or cinnamon-sugar pecans for topping
• For serving: fresh sliced apples, pears, ginger snaps, or pretzel chips

INSTRUCTIONS

1. In a medium-small serving dish, layer one-third of the cream cheese followed by one-third of the caramel sauce. Repeat layering two more times. Can be covered and chilled until ready to serve. When ready to serve, sprinkle with chopped cinnamon-sugar pecans  or roasted nuts of your choice. 
2. Serve with plenty of freshly sliced apples, pears, ginger snaps, or pretzel chips.

 Brownie Cookies

• 1 batch of prepared brownie batter according to box or a favorite brownie recipe (I used a Duncan Hines mix )

Chocolate Chip Cookie Dough Frosting

• 1½ cups (3 sticks) unsalted butter, at room temperature
• ¾ cup light brown sugar, packed
• 3½ cups confectioners’ sugar
• 1 cup all-purpose flour
• ¾ teaspoon salt
• 3 tablespoons milk
• 2½ teaspoon vanilla extract
• 3/4 cup mini chocolate chips

DIRECTIONS:

Brownie Cookies

1. Heat oven to 325°.
2. Spoon tablespoonfuls of brownie batter, one at a time, onto a baking sheet lined with parchment paper. Bake for 10-12 minutes or until puffed and cracked. Allow to cool completely on pan.

Chocolate Chip Cookie Dough Frosting

1. Using an electric mixer, beat butter and brown sugar with the paddle attachment on high speed until creamy and fluffy.
2. Mix in the confectioners’ sugar until smooth.
3. Beat in the flour and salt.
4. Mix in the milk and vanilla extract until smooth and combined.
5. Fold in Chocolate Chips.

Assembly

1. Spread half the cookies with the cookie dough frosting and top with the remaining cookies.
2. Enjoy!

Once a year, nearly 7,000 people will dress in their favorite running gear or costume to attack the Krispy Kreme Challenge. You have 1 hour to eat a dozen donuts … while running 5 miles. The race starts and ends at the North Carolina State University Belltower, looping through downtown Raleigh, NC.

If you are not feeling up for the challenge, you can sign up as a casual runner/eater. If you do not finish the donuts, you can take them home with you.

Not only does the Krispy Kreme challenge feed the hunger of it’s runners, it has also raised $1.35 million for the UNC Children’s Hospital over the past 13 years.

This year’s race will take place on Saturday, Frbruary 1st. To register for the race you can click here. If you do not want to actually take place in the challenge, you can shop, volunteer and donate to the cause as well.

• 1 box brownie mix
• 1 box Vanilla Honey Graham Cookies
• 1 package mini marshmallows
• 2 tbsp oil
• 3/4 cup water

Directions: 

1. Preheat oven to 350 degrees. Line a cupcake pan with greased baking cups.
2. In a large bowl, prepare the brownie mix as directed on box. Set aside.
3. Put a circle of the graham cookies at the bottom of each baking cup. The cookies are larger than the cups, so you’ll have to break them around the edges to make a smaller circle.
4. Save the pieces you break off and crush into crumbs. They’ll be used for topping later.
5. Place a generous amount of the brownie batter into each cup on top of the cookie.
6. Bake for 20 minutes.
7. Remove brownies and top with a handful of mini marshmallows.
8. Bake for another 5-6 minutes until the marshmallows melt and just start to get golden brown on top.
9. Transfer to a cooling rack and top with remaining graham cookie crumbs.

• 1 cup almond flour
• 1/2 cup creamy peanut butter (all natural variety that just contains peanuts and salt)
• 1/4 cup pure maple syrup
• 1 TB coconut flour
• 1/2 cup chocolate chips (I like dark chocolate)
• Optional: 1/4 cup roasted, salted peanuts, chopped

Instructions

1. Line a 9×5 inch loaf pan with parchment paper.
2. In a large bowl, stir together almond flour, peanut butter, maple syrup and coconut flour.
3. Spoon peanut butter mixture into prepared pan. Using your hands, push down into an even layer.
4. Melt chocolate chips in the microwave or in a pan over low heat. Spread melted chocolate over peanut butter layer.
5. Top with peanuts.
6. Freeze 30 minutes or until hardened.
7. Remove bars from pan. Using a sharp knife, slice into 8-12 bars.
8. Store leftovers in the fridge for up a week or freeze for up to one month.

• 2 1/2 cups almond flour⁣⁣
• 3 eggs⁣⁣
• 1/2 cup milk of choice ⁣⁣
• 1/3 cup maple syrup⁣⁣
• 5 tbsp butter melted⁣⁣

• 1 tsp baking soda ⁣⁣
• 1 tsp baking powder ⁣⁣

Apple Mixture (combine)

• 2 red apples
• 1/4 cup brown sugar
• 2 tsp cinnamon

Coconut butter (melted) for drizzling on top

INSTRUCTIONS

1. Preheat oven to 350 degrees F and line a bread pan with parchment paper⁣⁣
2. Whisk together eggs, maple syrup, butter, milk and vanilla extract. In a separate bowl, combine flour and baking soda ⁣⁣
3. Combine wet and dry ingredients. Mix in half the apple mixture
4. Pour into bread pan. Top with the remaining apple mixture (+ extra brown sugar if you want) ⁣⁣
5. Bake for 1 hr – 1 hr 15 min ⁣⁣
6. Let cool, top with coconut butter & refrigerate until coconut butter hardens

• 1 package ready-to-bake large chocolate chip cookies 16 ounce package
• 1 package miniature marshmallows
• 10 ounces milk chocolate melting wafers or good quality milk chocolate chips
• 1 cup crushed graham crackers

INSTRUCTIONS

1. Preheat oven to 350 degrees F. Line a large baking sheet with aluminum foil or parchment paper.
2. Place cookies 2 inches apart on baking sheet and bake per package directions.
3. Also, while cookies are baking, crush the graham crackers and pour the crushed crackers in a small bowl.
4. When cookies are ready, transfer cookies and tray to a cooling rack.
5. Turn the oven to broil.
6. Place 8-10 mini marshmallows on the top of each cookie and very lightly press down (just so marshmallows will stay put).
7. Place the cookies back in the oven, under broil, just until marshmallows begin to turn golden brown. **Watch closely – marshmallows burn quickly.
8. Remove the cookies from the oven, place the tray with the cookies on a cooling rack and allow them to cool completely.
9. Once cookies have cooled, melt the chocolate (melt in 30 second intervals until smooth and fully melted when stirred.) then dip each cookie halfway into the melted chocolate.
10. Sprinkle crushed graham cracker crumbs over the chocolate.
11. Transfer cookies to a cooling rack until chocolate is set.
12. Enjoy!

An “embarrassing” custom made unicorn cake has landed two people in court.

Alexandra Schroeder, from Michigan, had been planning her daughter’s fifth birthday party for months. It was held at Whipped Bakery, in Lansing, and was going to be a “baking birthday bash.” She requested a unicorn cake to be made for her daughter, and was not happy with the end result.

“The horn came out in a shape that was so embarrassing,” Schroeder told the news outlet. “It had finger prints on it and was not gold. I could tell that it had been handled. When I asked to see the cake pre-party before my guest arrived I was told it wasn’t finished.”

When the disgruntled mother shared the photos of the cake on social media, it upset the bakery owners who retaliated by claiming her party left a mess and she still owed money.

The bakery refused to comment and says it will be settled in court.
