Easter Egg Breakfast Sliders
Fluffy, cheesy breakfast sandwiches with a festive twist—perfect for a spring morning or Easter brunch spread!
Ingredients (makes 12 sliders):
- 1 pack of Hawaiian sweet rolls (12-count)
- 6 large eggs
- 6 slices cooked bacon or breakfast sausage (optional)
- 6 slices cheddar or American cheese
- 3 tbsp butter (melted)
- 1 tbsp honey or maple syrup
- Salt & pepper to taste
- Optional: pastel food coloring (for dyed buns or eggs!)
Instructions:
- Prep the Rolls:
- Slice the entire pack of Hawaiian rolls in half horizontally (keep them connected like a sheet).
- Place the bottom half in a greased baking dish.
- Make the Eggs:
- Whisk the eggs with salt and pepper.
- Scramble in a skillet over medium heat until just set (you can also bake them in a square pan for even layering).
- Cut into 12 portions or keep whole for layered effect.
- Assemble the Sliders:
- Layer the scrambled eggs evenly over the bottom rolls.
- Add bacon or sausage, if using.
- Place a slice of cheese on each portion.
- Cover with the top half of the rolls.
- Brush & Bake:
- Mix melted butter with honey or maple syrup.
- Brush the tops of the buns generously.
- Bake at 350°F (175°C) for 10–12 minutes until tops are golden and cheese is melted.
Optional Easter Twist:
- Dye the top buns by brushing them lightly with pastel food coloring mixed with a bit of milk before baking.
- Cut the eggs with an egg-shaped cookie cutter for extra flair!
