No-Bake Chocolate Peanut Butter Oat Bars

No oven. No stress. Just pure dessert bliss. Would you share these or hide them in the fridge behind the veggies?


Ingredients:

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • ½ cup honey or maple syrup
  • ½ tsp vanilla extract
  • 1 cup chocolate chips
  • 1 tbsp coconut oil (or butter)

Instructions:

  1. Mix the Base:
    • In a medium saucepan, warm peanut butter and honey over low heat until smooth.
    • Remove from heat and stir in vanilla and oats. Mix well.
  2. Press into a Pan:
    • Line an 8×8 dish with parchment paper.
    • Press half of the oat mixture evenly into the bottom.
  3. Melt Chocolate:
    • In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  4. Top & Chill:
    • Pour chocolate over the oat base and spread evenly.
    • Top with the other half of the oat mixture.
    • Chill in the fridge for 2 hours or until set.
  5. Slice & Enjoy!
    • Cut into squares or bars and devour.
