No-Bake Chocolate Peanut Butter Oat Bars

Ingredients:
- 2 cups rolled oats
- 1 cup creamy peanut butter
- ½ cup honey or maple syrup
- ½ tsp vanilla extract
- 1 cup chocolate chips
- 1 tbsp coconut oil (or butter)
Instructions:
- Mix the Base:
- In a medium saucepan, warm peanut butter and honey over low heat until smooth.
- Remove from heat and stir in vanilla and oats. Mix well.
- Press into a Pan:
- Line an 8×8 dish with parchment paper.
- Press half of the oat mixture evenly into the bottom.
- Melt Chocolate:
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- Top & Chill:
- Pour chocolate over the oat base and spread evenly.
- Top with the other half of the oat mixture.
- Chill in the fridge for 2 hours or until set.
- Slice & Enjoy!
- Cut into squares or bars and devour.
