BBQ Bacon Wrapped Volcano Potatoes
One thing is for sure when it comes to these grilled volcano potatoes. I double-dog dare you to try and take one off my plate. These little tasty potatoes are packed with everything you dream of. All topped with an incredible sour cream sauce that I have since been using to top everything from regular ole baked potatoes to enchiladas.
Ingredients:
- 4 large baking potatoes
- 8-12 strips of bacon
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup green onions, chopped
- 1/4 cup barbecue sauce
- Salt and pepper to taste
- Additional toppings (optional): sour cream, chives, extra barbecue sauce
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and pat them dry. Using a sharp knife, cut off the top of each potato to create a flat surface.
- Carefully hollow out the center of each potato, leaving enough edge to maintain the potato’s structure.
- Stuff the Potatoes:
- In a bowl, mix together the shredded cheddar cheese, cream cheese, and chopped green onions. Season with salt and pepper.
- Stuff this mixture into the hollowed-out center of each potato.
- Wrap with Bacon:
- Wrap each potato with 2-3 strips of bacon. Ensure the bacon covers the potato completely. You can use toothpicks to secure the bacon, if necessary.
- Bake the Potatoes:
- Place the bacon-wrapped potatoes on a baking sheet lined with aluminum foil or a baking rack.
- Bake in the preheated oven for about 40-45 minutes, or until the potatoes are cooked through and the bacon is crispy.
- Add Barbecue Sauce:
- During the last 10 minutes of baking, brush each potato with barbecue sauce.
- Serve:
- Once done, remove the potatoes from the oven and let them cool slightly.
- Serve the BBQ Bacon Wrapped Volcano Potatoes with additional toppings like sour cream, chives, and extra barbecue sauce, if desired.
