Ingredients:

  • 4 ears of corn, husked
  • 2 tbsp olive oil

Instructions:

  1. Prep the Corn:
    • Stand each ear of corn upright on its stem end. Using a sharp knife, carefully slice the corn into quarters lengthwise to create the “ribs.”
  2. Blanch the Corn:
    • Bring a large pot of water to a boil. Carefully add the sliced corn pieces and let them blanch for 3-5 minutes. This process softens the corn and makes it easier to eat once grilled or baked.
    • Using tongs, remove the corn pieces and place them on a paper towel to dry.
  3. Season the Corn:
    • In a large bowl, combine olive oil, smoked paprika, garlic powder, chili powder, onion powder, cayenne pepper (if using), salt, and pepper.
    • Add the blanched corn ribs to the bowl and toss them until they’re well-coated with the seasoning mixture.
  4. Cooking Options:Grilling:

    Oven Baking:

  5. Serve:
