Corn Ribs
Corn ribs are a trendy and delightful twist on traditional corn on the cob, transforming corn into crispy, flavorful “ribs” that are perfect for snacking or as a unique side dish. This recipe combines savory, spicy, and sweet flavors for a truly memorable dish.
Ingredients:
- 4 ears of corn, husked
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp chili powder (adjust to taste)
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional for extra heat)
- Salt and pepper, to taste
- Fresh chopped cilantro or parsley, for garnish
- Lime wedges, for serving
Instructions:
- Prep the Corn:
- Stand each ear of corn upright on its stem end. Using a sharp knife, carefully slice the corn into quarters lengthwise to create the “ribs.”
- Blanch the Corn:
- Bring a large pot of water to a boil. Carefully add the sliced corn pieces and let them blanch for 3-5 minutes. This process softens the corn and makes it easier to eat once grilled or baked.
- Using tongs, remove the corn pieces and place them on a paper towel to dry.
- Season the Corn:
- In a large bowl, combine olive oil, smoked paprika, garlic powder, chili powder, onion powder, cayenne pepper (if using), salt, and pepper.
- Add the blanched corn ribs to the bowl and toss them until they’re well-coated with the seasoning mixture.
- Cooking Options:Grilling:
- Preheat your grill to medium-high heat.
- Place the seasoned corn ribs on the grill and cook for about 10-15 minutes, turning occasionally, until they are charred and crispy.
- Preheat your oven to 425°F (220°C).
- Lay the seasoned corn ribs on a baking sheet lined with parchment paper or a silicone mat.
- Bake for 20-25 minutes, turning them halfway through, until they are golden brown and have a crispy texture.
- Serve:
- Once cooked, transfer the corn ribs to a serving platter.
- Garnish with fresh chopped cilantro or parsley and a squeeze of lime.
- Serve immediately with additional lime wedges on the side.
These corn ribs are a perfect blend of smoky, spicy, and sweet. They’re a fun and flavorful way to enjoy corn, making them a surefire hit at barbecues, potlucks, or any mealtime. Enjoy!
