Ingredients:

  • 1 tablespoon olive oil

  • 1 bell pepper, diced (any color)
  • 1 cup sliced mushrooms
  • 1 pound Italian sausage (or ground turkey/chicken for a lighter option)
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 (8 oz) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup mini pepperoni (or regular pepperoni, sliced)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions:

  1. Preparation: In a large pot, heat olive oil over medium heat. Add onions, garlic, bell pepper, and mushrooms. Sauté until the vegetables are soft and the onions translucent, about 5 minutes.
  2. Add Meat: Crumble the Italian sausage into the pot, breaking it up with a wooden spoon. Cook until browned and no longer pink.
  3. Combine Ingredients: Stir in diced tomatoes, chicken or vegetable broth, tomato sauce, oregano, basil, and red pepper flakes. Season with salt and pepper.
  4. Simmer: Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes to meld the flavors.
  5. Add Pepperoni: Stir in the mini pepperoni and allow to simmer for an additional 5 minutes.
