Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 6

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 cup sliced mushrooms
  • 1 pound Italian sausage (or ground turkey/chicken for a lighter option)
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 (8 oz) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup mini pepperoni (or regular pepperoni, sliced)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

  1. Preparation: In a large pot, heat olive oil over medium heat. Add onions, garlic, bell pepper, and mushrooms. Sauté until the vegetables are soft and the onions translucent, about 5 minutes.
  2. Add Meat: Crumble the Italian sausage into the pot, breaking it up with a wooden spoon. Cook until browned and no longer pink.
  3. Combine Ingredients: Stir in diced tomatoes, chicken or vegetable broth, tomato sauce, oregano, basil, and red pepper flakes. Season with salt and pepper.
  4. Simmer: Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes to meld the flavors.
  5. Add Pepperoni: Stir in the mini pepperoni and allow to simmer for an additional 5 minutes.
  6. Serve: Ladle the soup into bowls. Top each serving with a generous sprinkle of mozzarella and Parmesan cheese. The heat from the soup will melt the cheese, giving you that pizza-like feel. Garnish with fresh basil or parsley.
  7. Optional: For an added touch, serve with garlic bread on the side to dip into the soup, replicating the pizza crust experience.

This soup is versatile. You can add other favorite pizza toppings like black olives, green peppers, or even diced pineapple for a “Hawaiian pizza” twist. Adjust ingredients to match your preferred pizza flavors.
