Trying something different with this Skillet Queso with Charred Salsa! 🧀 🍅 🍻 🔥 . For those that do not know, queso it my spirit animal. It is the greatest thing in the whole world right behind fire cooking. Never have made queso over the fire, but after seeing so many people make it lately I had to give it a try. Here is my Skillet Queso with Charred Salsa Recipe. Now I do have to admit (before someone says it in the comments) that I used Melting Cheese (aka Velvetta…) to make this recipe, but hey… you can it with something better it if you want too. Queso: – 16oz of Melting Cheese – 1/2 cup of Milk – 1/4 cup of Ground Chorizo – 1/4 cup of Pepper Jack Cheese – Chips, for dipping (duh!) . Charred Salsa: – 1/8 cup of Charred Poblano, diced – 1 Whole Jalapeño, diced – 2 tbsp of Onions, diced – 2 tbsp of Tomatoes, diced – 2 tbsp of Cilantro, chopped – 1 tbsp of Scallions, chopped – 2 Limes, juiced . Instructions: 1. Preheat your charcoal to a medium-high (375F). 2. Add your whole poblano and jalapeño peppers to char for 2 minutes. Once done, pull off and set aside. 3. Preheat your skillet for 1 minute. Add your chorizo and cook for 4-5 minutes until done. Pull off and set aside. 4. Add to your skillet the melting cheese and milk. Cook until they are fully melted. Cover the top with the cooked chorizo then the pepper jack cheese. Cover the skillet with tin foil and put your skillet on the cooler side of the grill. Top the skillet with charcoals to melt the cheese. 5. In a bowl, mix all the ingredients for the Charred Salsa. 6. Pull off the tin foil once the cheese is melted and add the salsa to the middle.
