Ingredients:
For the Cookies:
- 1/2 cup unsalted butter, softened

- 1/2 cup pure pumpkin purée
- 1 large egg
- 1 tsp pure vanilla extract
- 1 tbsp instant coffee or espresso powder

- 2 tsp pumpkin pie spice

- 1 cup powdered sugar
- 1-2 tbsp brewed coffee (adjust to desired consistency)
- 1/4 tsp vanilla extract
Instructions:
- Prepare the Cookie Dough:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the pumpkin purée, egg, and vanilla extract.
- Dissolve the instant coffee or espresso powder in a tablespoon of hot water. Add this to the mixture and stir.
- In another bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice. Gradually add this to the wet mixture and stir until combined.

- Once the cookies have completely cooled, drizzle the glaze over them using a spoon or a piping bag.
