Pickle De Gallo

A tangy twist on the classic pico de gallo, this refreshing dip combines the briny crunch of pickles with the freshness of tomatoes and onions. Perfect for those who love a touch of sourness in their salsa!

  1. 1 cup finely diced dill pickles
  2. 2 medium tomatoes, seeds removed and finely diced
  3. 1 small red onion, finely diced
  4. 1 jalapeño, seeds removed and finely diced (adjust based on heat preference)
  5. 2 cloves garlic, minced
  6. 2 tablespoons fresh dill, chopped
  7. 1 tablespoon fresh parsley, chopped
  8. 1 lime, juiced
  9. Salt, to taste
  10. Freshly ground black pepper, to taste

  1. Combine Ingredients: In a mixing bowl, combine the diced pickles, tomatoes, red onion, jalapeño, and minced garlic. Mix until well combined.
  2. Add Herbs: Stir in the fresh dill and parsley, mixing until evenly distributed throughout the salsa.
  3. Season: Squeeze the lime juice over the mixture, and toss to coat everything well. Season with salt and freshly ground black pepper to taste. Adjust seasoning if necessary.
  4. Chill and Serve: For best flavor, let the pickle de gallo sit in the refrigerator for at least an hour to meld the flavors. Serve with tortilla chips, on tacos, or as a refreshing side for grilled dishes.

Note: The tanginess of the pickles gives this salsa a unique flavor, setting it apart from the usual pico de gallo. You can customize the recipe by adding ingredients like corn, avocado, or even small bits of feta cheese for an extra layer of taste and texture.

Enjoy this delightful and zesty twist on a classic favorite!
