  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 egg
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 3 cups marinara sauce
  • 2 cups all-purpose flour
  • 3 eggs, beaten
  • 4 cups breadcrumbs
  • Vegetable oil for frying

  1. Prep the Lasagna Noodles:
    • Bring a large pot of salted water to a boil. Cook lasagna noodles according to package instructions until al dente. Drain and lay the noodles flat on a sheet of parchment paper to cool.
  2. Make the Filling:
    • In a mixing bowl, combine ricotta cheese, ½ cup Parmesan cheese, 1 cup mozzarella cheese, 1 egg, parsley, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Assemble the Rolls:
    • Lay a lasagna noodle flat. Spread a layer of the cheese mixture over the noodle. Roll the noodle up tightly. Repeat with the remaining noodles and cheese mixture.
  4. Freeze the Rolls:
    • Place the rolled lasagna noodles on a baking sheet and freeze for about 1 hour. This will make them easier to handle during the frying process.
  5. Prep for Frying:
    • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
    • Place flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
  6. Dredge and Fry:
    • Take a frozen lasagna roll and dredge it in flour, dip it in the beaten eggs, and then coat it with breadcrumbs. Make sure it is well-coated at each stage.
    • Carefully lower the roll into the hot oil and fry until golden brown, about 4-5 minutes. Repeat with the remaining rolls.
  7. Drain:
    • Remove the fried lasagna rolls from the oil and drain on a paper towel-lined plate to remove excess oil.
  8. Serve:
    • Warm the marinara sauce in a saucepan or microwave.
    • Place a fried lasagna roll on a plate, spoon some marinara sauce over the top, and sprinkle with the remaining mozzarella and Parmesan cheeses.
    • Serve hot and enjoy!

Deep fried lasagna rolls make a fantastic and indulgent appetizer or main dish, perfect for those who love a crispy twist on classic Italian flavors!
