- 1 tsp cinnamon
Filling:
- 24 oz (3 packages) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1/4 cup honey
- 2 tsp ground cinnamon
Cinnamon Swirl:
- 1/2 cup brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp melted butter
Honey Glaze:
- 1/4 cup honey
- 1 tbsp butter, melted
- 1/2 tsp vanilla extract
Instructions:
1. Prepare the Crust:
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Mix until the crumbs are fully coated.
- Press the mixture into the bottom of a greased 9-inch springform pan. Bake the crust for 10 minutes, then let it cool.
2. Make the Cheesecake Filling:
- In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Blend in the sour cream, vanilla extract, honey, and ground cinnamon until fully incorporated.
3. Prepare the Cinnamon Swirl:
- In a small bowl, mix together the brown sugar, cinnamon, and melted butter to create the swirl mixture.
4. Assemble the Cheesecake:
- Pour half of the cheesecake filling over the pre-baked crust.
- Drizzle half of the cinnamon swirl mixture over the filling, then use a knife or toothpick to create swirls.
- Pour the remaining cheesecake filling on top, followed by the rest of the cinnamon swirl mixture. Swirl again gently.
5. Bake the Cheesecake:
- Bake for 55-65 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the door open, letting the cheesecake cool inside the oven for 1 hour.
- Transfer the cheesecake to the fridge to chill for at least 4 hours, or overnight.
6. Add the Honey Glaze:
- In a small bowl, whisk together honey, melted butter, and vanilla extract.
- Drizzle the honey glaze over the chilled cheesecake before serving.
