Cinnamon Honey Bun Cheesecake Recipe

Combining a honey bun-inspired crust with a cinnamon swirl and velvety cheesecake filling, it’s an irresistible treat that captures the best of both worlds.


Ingredients:

Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Filling:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 2 tsp ground cinnamon

Cinnamon Swirl:

  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp melted butter

Honey Glaze:

  • 1/4 cup honey
  • 1 tbsp butter, melted
  • 1/2 tsp vanilla extract

Instructions:

1. Prepare the Crust:

  • Preheat your oven to 325°F (160°C).
  • In a bowl, combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Mix until the crumbs are fully coated.
  • Press the mixture into the bottom of a greased 9-inch springform pan. Bake the crust for 10 minutes, then let it cool.

2. Make the Cheesecake Filling:

  • In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition.
  • Blend in the sour cream, vanilla extract, honey, and ground cinnamon until fully incorporated.

3. Prepare the Cinnamon Swirl:

  • In a small bowl, mix together the brown sugar, cinnamon, and melted butter to create the swirl mixture.

4. Assemble the Cheesecake:

  • Pour half of the cheesecake filling over the pre-baked crust.
  • Drizzle half of the cinnamon swirl mixture over the filling, then use a knife or toothpick to create swirls.
  • Pour the remaining cheesecake filling on top, followed by the rest of the cinnamon swirl mixture. Swirl again gently.

5. Bake the Cheesecake:

  • Bake for 55-65 minutes, or until the center is set but still slightly jiggly.
  • Turn off the oven and crack the door open, letting the cheesecake cool inside the oven for 1 hour.
  • Transfer the cheesecake to the fridge to chill for at least 4 hours, or overnight.

6. Add the Honey Glaze:

  • In a small bowl, whisk together honey, melted butter, and vanilla extract.
  • Drizzle the honey glaze over the chilled cheesecake before serving.
