Win Thanksgiving With Deep Fried Pecan Pie
Whether you have leftover pie, or just want to turn your dessert spread WAY up, this deep fried pecan pie is the stuff sweet dreams are made of.
Ingredients:
For the Pecan Pie Filling:
- 1 cup corn syrup
- 1 cup brown sugar
- 3 eggs
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 1/2 cups chopped pecans
For the Pie Crust:
- 1 package refrigerated pie crusts (or homemade equivalent)
For Frying:
- Oil for deep frying (like vegetable or canola oil)
- Confectioners’ sugar for dusting
For Serving:
- Vanilla ice cream (optional)
- Caramel sauce (optional)
Instructions:
- Make the Filling: In a medium bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt until smooth. Stir in chopped pecans. Set aside.
- Prepare Pie Crusts: Roll out the pie crusts on a flat surface. Use a round cutter or a large mug to cut out circles about 4 inches in diameter.
- Fill the Pies: Spoon a small amount of pecan pie filling into the center of each crust circle, leaving enough edge to seal the pies without the filling spilling out.
- Seal the Pies: Moisten the edges of the crust with water, fold over, and press to seal. Use a fork to crimp the edges. Make sure they are sealed well to prevent leaking during frying.
- Chill: Place the filled and sealed pies in the refrigerator for at least 30 minutes. This will help them hold their shape when fried.
- Heat the Oil: Heat oil in a deep fryer or large pot to 350°F (175°C). Ensure there is enough oil to completely submerge the pies.
- Fry the Pies: Fry the pies in batches, being careful not to overcrowd the pot. Cook for about 2-3 minutes or until they are golden brown and flaky.
- Drain: Remove the pies with a slotted spoon and drain on a paper towel-lined plate.
- Serve: Dust the deep-fried pecan pies with confectioners’ sugar. Serve hot with a scoop of vanilla ice cream and a drizzle of caramel sauce, if desired.
Enjoy your indulgent twist on a Southern classic, perfect for when you want a decadent dessert that combines the charm of pecan pie with the crispy texture of deep-fried treats!
