Mini Boston Cream Pie Cookie Bites

Ingredients:
For the Cookie Base:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1 cup milk
- 3 egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch

- 1/2 cup heavy cream
- 4 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
Instructions:
- Prepare the Cookie Base:
- Preheat oven to 350°F (175°C). Line a mini muffin tin with paper liners.
- In a bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
- Scoop a tablespoon of dough into each mini muffin cup. Press down to form a small well in the center.

- Top each with a spoonful of chocolate glaze.
- Chill:
