French Onion Mashed Potatoes

  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream

  • 1 teaspoon fresh thyme leaves, chopped

  1. Caramelize the Onions:

  2. Cook the Potatoes:
    • Place the quartered potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
