Ingredients:
- 8 slices of thick-cut brioche or challah bread
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1 cup fresh strawberries, diced
- 4 oz cream cheese, softened
- 2 tbsp granulated sugar
- 1 tbsp powdered sugar, for dusting
- Butter, for frying
- Optional toppings: whipped cream, maple syrup, extra sliced strawberries
Instructions:
- Prepare the Filling: In a mixing bowl, combine the softened cream cheese, granulated sugar, and half of the diced strawberries. Mix until well combined.
- Prepare the French Toast Batter: In another bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth.
- Assemble: Take one slice of bread and spread a generous amount of the strawberry cream cheese mixture on one side. Place another slice of bread on top, sandwiching the filling in between. Repeat for the remaining slices.
- Fry: Heat a large skillet or griddle over medium heat and add a knob of butter, allowing it to melt. Once hot, dip each bread sandwich into the egg mixture, ensuring both sides are well-coated, then place it in the skillet. Cook until golden brown, about 3-4 minutes per side.
- Serve: Transfer the cooked French toast to plates. Dust with powdered sugar, and if desired, top with whipped cream, extra strawberries, and a drizzle of maple syrup. Serve immediately and enjoy!
