Ingredients:

  • 1 cup shredded cheddar cheese (or your choice of cheese)
  • 4 large eggs
  • 1/2 pound sausage (your preference: pork, turkey, etc.)
  • 1 cup hashbrowns (fresh or frozen)
  • 1/4 cup diced onion (optional)
  • Salt and pepper, to taste
  • 1/2 cup salsa of choice
  • 1/4 cup chopped fresh cilantro (optional for garnish)
  • Cooking oil or butter, for frying

Instructions:

  1. Prepare the Crispy Cheese Taco Shell: a. Preheat a non-stick skillet over medium heat. b. Sprinkle the shredded cheese evenly in a circle shape on the skillet, about 6 inches in diameter. c. Cook until the edges are golden brown and the center is fully melted, about 2-3 minutes. d. Carefully use a spatula to lift one edge of the cheese circle, fold it in half to form a taco shell shape. Let it cook for another 30 seconds to solidify its shape. e. Remove from heat and set it on a plate lined with paper towels to drain any excess oil. Repeat with the remaining cheese.
  2. Prepare the Sausage & Hashbrowns: a. In a separate skillet, cook the sausage over medium-high heat, breaking it into small crumbles. b. Once the sausage is browned, move it to one side of the skillet. c. On the empty side, add a small amount of cooking oil or butter, and place the hashbrowns (and onions if using). Cook until they’re golden brown and crispy. d. Mix the sausage and hashbrowns together and season with salt and pepper. Remove from the skillet and set aside.
  3. Cook the Eggs: a. In a bowl, beat the eggs and season with a pinch of salt and pepper. b. In the same skillet, add a touch of butter or oil and pour in the beaten eggs. c. Gently scramble the eggs over medium heat until they’re fully cooked but still soft.
  4. Assemble the Taco: a. Hold a crispy cheese taco shell and add a generous portion of the sausage and hashbrown mixture. b. Top with scrambled eggs. c. Drizzle with your favorite salsa. d. Garnish with chopped cilantro if desired.
